Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 cup buttermilk

2 large eggs

1/2 cup unsalted butter, melted (plus extra for the skillet)

Instructions

Preheat the oven to 400°F (200°C). Place a cast iron skillet inside the oven with a little butter so it gets hot.

In a bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. In another bowl, mix the buttermilk, eggs, and melted butter. Combine the wet and dry ingredients until just blended.

Carefully remove the hot skillet, swirl the melted butter to coat, then pour in the batter. Smooth the top and bake for 20–25 minutes until golden brown with crisp edges. Let it cool slightly, slice, and serve.
