Ingredients:

All-purpose flour

Water

Salt

Sugar

Ghee or oil (for layering and cooking)

Instructions:

In a large bowl, combine the all-purpose flour, salt, and sugar.

Gradually add water until a soft dough forms.

Knead the dough for about 10 minutes until smooth and elastic.

Divide the dough into small balls (about golf ball size).

Coat each ball with ghee or oil, then cover and let them rest for at least 1-2 hours (or overnight for best results).

Take a rested dough ball and flatten it with your palms.

Use your fingers to stretch the dough as thin as possible without tearing.

Apply more ghee or oil on the stretched dough.

Roll it into a spiral shape and flatten it again slightly.

Heat a pan or griddle over medium heat and add a little ghee or oil.

Place the flattened dough on the pan and cook until golden brown on both sides, flipping once.

Stack the cooked rotis and keep covered to retain warmth.

Serve hot with curry or dhal for dipping. Enjoy!
