Ingredients
3 medium cucumbers, sliced
3 ripe tomatoes, chopped or sliced
1 small white or red onion, thinly sliced
1/4 cup olive oil
2 tablespoons red wine vinegar or apple cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon sugar (optional)
Fresh parsley or dill, finely chopped (optional)
Instructions
Place the sliced cucumbers, tomatoes, and onion into a large bowl.
In a small bowl, whisk together the olive oil, vinegar, salt, black pepper, oregano, and sugar if using.
Pour the marinade over the vegetables and gently toss until everything is well coated.
Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
Toss again before serving and sprinkle with fresh herbs if desired.
