Fluffy Pancake Recipe
Ingredients
1½ cups all-purpose flour
3½ teaspoons baking powder
1 tablespoon sugar
½ teaspoon salt
1¼ cups milk (room temperature)
1 large egg (room temperature)
3 tablespoons melted butter (or oil)
1 teaspoon vanilla extract (optional)
Instructions
Mix dry ingredients
In a bowl, whisk together flour, baking powder, sugar, and salt.
Mix wet ingredients
In another bowl, whisk milk, egg, melted butter, and vanilla.
Combine gently
Pour wet ingredients into dry. Stir just until combined.
✔ Lumpy batter = fluffy pancakes
✘ Overmixing = flat pancakes
Rest the batter
Let it sit for 5–10 minutes. This makes a huge difference.
Cook
Heat a lightly greased pan or griddle over medium-low heat.
Pour about ¼ cup batter per pancake.
Flip
When bubbles form on top and edges look set (2–3 min), flip.
Cook another 1–2 minutes until golden.
Serve hot
Butter, syrup, fruit, whipped cream—your call.
