🧾 Ingredients


3½ cups (450 g) all-purpose or bread flour


1½ tsp salt


2 tbsp sugar or honey


1½ tsp ground cinnamon


1¼ tsp instant yeast


1½ cups (360 ml) warm water


¾ cup dried cranberries


½ cup raisins


¾ cup walnuts, roughly chopped


1 tbsp olive oil (optional, for softness)


🥣 Instructions


1. Mix the Dough


In a large bowl, mix flour, salt, sugar, cinnamon, and yeast.


Add warm water (and olive oil if using). Stir until a shaggy dough forms.


2. Add the Good Stuff


Fold in cranberries, raisins, and walnuts until evenly distributed.


3. First Rise


Cover bowl with plastic wrap or a towel.


Let rise at room temperature 8–12 hours (overnight works best) until doubled and bubbly.


4. Shape


Turn dough onto floured surface. Gently shape into a round loaf.


Rest 30 minutes while oven heats.


5. Preheat & Bake


Preheat oven to 230°C (450°F) with a Dutch oven inside.


Carefully place dough into hot Dutch oven (parchment helps).


Score the top lightly.


Bake:


30 minutes covered


15 minutes uncovered until deep golden brown.


6. Cool


Cool on a rack at least 1 hour before slicing.
