Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/2 teaspoon active dry yeast (optional for leavening)
- 1 cup lukewarm water
- Ghee or butter for brushing
Instructions:
1. *Prepare the Dough*: In a large mixing bowl, combine the flour, salt, sugar, and yeast (if using). Gradually add the lukewarm water and mix until a soft dough forms. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover the dough and let it rest for 1-2 hours, or until it has doubled in size.
2. *Divide the Dough*: Divide the dough into small equal portions and shape them into balls. Roll out each ball into a thin circle.
3. *Cook the Roti*: Heat a non-stick skillet or tava over medium heat. Place the rolled-out dough on the skillet and cook for about 1-2 minutes on each side, or until it is lightly browned and cooked through. Brush with ghee or butter.
4. *Serve*: Serve the Khameeri Roti hot, either stacked as shown in the image or rolled up. It can be enjoyed with various Pakistani dishes or used to scoop up your favorite curries and stews.
This traditional Pakistani flatbread is a staple in many households and is often served with a variety of dishes.
