For the Crust:

1 ½ cups (180g) graham cracker crumbs

¼ cup (50g) sugar

½ cup (115g) melted butter

For the Cheesecake Filling:

3 (8 oz.) packages (680g) cream cheese, softened

1 cup (200g) sugar

3 large eggs

1 cup (240ml) heavy cream

1 tablespoon vanilla extract

1 tablespoon cornstarch or flour

For the Caramelized Sugar Topping:

¼ cup (50g) granulated sugar

👨‍🍳 Instructions

1️⃣ Prepare the Crust:

Preheat the oven to 325°F (160°C).

In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.

Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

Bake for 10 minutes, then let cool.

2️⃣ Make the Cheesecake Filling:

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs, one at a time, mixing on low speed.

Stir in vanilla extract, heavy cream, and cornstarch/flour until fully combined.

Pour the batter over the crust.
